Summer Tomato Salad
Do you wish it was summer already? For the first year of my life, I actually wish it was summer. Lucky for me, today has been a beautiful day. It’s the first time in what seems like a month that there has been any sun in our town. When I woke up, the light was blaring through the windows and heating up our apartment. On my way to the grocery store, I had my sunglasses on and the windows rolled down. It was wonderful.
Thanks to the sun’s oh-so-special appearance, I was in the mood for something fresh and summery - and there was a special on tomatoes from Spain. Normally I’m not huge of tomatoes, but Marc loves them. So I whipped us up a simple tomato salad for lunch today and it was delicious and fresh – exactly what I wanted to eat today.

Ingredients
7 plum tomatoes
1/3 cup roughly chopped basil
1/3 cup roughly chopped flat-leaf parsley
1/2 teaspoon granulated garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
Instructions
- Roughly chop the tomatoes.
- In a large bowl, mix toss the tomatoes with the remaining ingredients.
- Adjust seasonings if necessary.
